Flavour Selection Technology

Selection of the most appropriate flavour is critical to the success of a product. However, when faced with numerous possible flavour options it can be very difficult to choose between them. Traditional methods employed to select the best flavour include carrying out a full-scale consumer acceptance test to indicate the best choice. While this is perfectly feasible for three or four flavours, the costs involved in testing a larger number can be prohibitive.

Ideally, the number of flavour options needs to be scientifically reduced in order to provide a feasible consumer test.

At WSS our highly trained panel of assessors uses flavour profiling techniques to define flavours in terms of their component notes. We then use sophisticated computational techniques combined with consumer acceptance data to arrive at the best flavour option for a given product.
